I know she was the goddess of victory, but exactly what role did she play in relation to the [ancient] Olympic games?

She provided the footwear. <G> Just kidding
NIKE (or Nicé) was the winged goddess or spirit (daimon) of victory, both in battle and peaceful competition hence her overseeing the Olympic games.

Nike was the goddess of victory. Hence, making sacrifices to her were thought to improve one’s chances of winning.
